Raj’s mom’s recipe
2 large chicken breasts, seasoned with salt/pepper, cooked in instapot, shredded with fork after natural pressure release
1 large onion chopped
jalepeno peppers
serveral garlic cloves chopped
cilantro
1.5 cans of 28oz Red Enchilada Sauce (Old El Paso brand)
stuff sauteed toppings into corn tortillas (microwave or fry quickly on pan first)
top with black olives
top with shredded cheese
bake in oven at 375° ~15 minutes
Chicken Stir-Fry
brown ~2lb chicken breast (coated in 2tsp salt) in 1/2 cup hot cooking oil
move chicken to plate, and lower heat to medium-high
cook in remaining oil (~8 min): 1.5 cup chopped onion, 1 tbsp minced garlic, 1.5 tsp minced ginger root
mix in: 1 tbsp water, 1 tbsp curry powder, and 1 tsp each of (ground): cumin, tumeric, corriander, cayene pepper
mix in: 15oz can crushed tomatoes, 1 cup plain yogurt, 1 tbsp chopped cilantro, 1 tsp salt
return chicken to pan, add 1/2 cup water, and bring to boild (turning chicken to coat with sauce)
sprinkle garam masala and 1 tbsp cilantro over chicken
cover and simmer ~20 min (until chicken fully cooked)
sprinkle with lemon juice to serve
Chili [3200 cal]
brown ~2.5 lb. of ground beef in pan
add:
2-3 onions and 2 packets of chili seasoning mix
two 14.5 oz can of diced tomatoes (or 32 oz of tomato sauce)
two 15 oz cans of kidney beans (undrained)
bring to boil, cover, and lower heat to let SIMMER for 10 min (stir occasionally)
15 Bean Soup [2800 cal]
Hurst’s 15 Bean Soup Package (20 oz)
14 oz chopped ham
2 onions
(follow “tradional recipe” on package)
Sloppy Joes
Heat and mix the following:
2 lb (cooked) ground beef
chopped onions and jalapenos
one 24 oz can of sloppy joe sauce
Burgers [2800 cal, ~10 burgers]
mix:
2.5lb ground beef
~2 onions
~2 cup oats
1 egg
mint, salt, etc
cook patties in a pan OR in oven at 375° for 20 min
Chicken Breast
bake at 400° for about 30 min
OR 15 min on high pressure in instant pot
if frozen, separate pieces so it cooks right!
if frozen, let sit for a few minutes before releasing pressure, use thermometer to verify internal temp > 165°
(pulled chicken): cook in instapot and sit until all pressure drains on its own
Rice
Rice:water ratio 1:2, add salt/butter
place on stove at high heat until simmering
stir briefly and cover
set to low heat (1.5), wait 20-25 min
Mario’s Lentils:
1 package lentils
7 cups water
6 oz tomato paste
1 onion and carrots/potatoes (as desired)
salt, pepper, cumin, bay leaves (to taste)
35 min high pressure in instant pot (also can cook chicken at same time if desired)
Mario adds ~1/5 cup vinegar (or some lemon juice) at the end to give it more of a sour taste
Hard Boiled Eggs
Place eggs in boiling water for 9 minutes.
OR bring eggs to boil and cool after 5 minutes of boiling
Mario’s golden potatoe wedges:
wedge cut golden potatoes
season with olive oil, salt, pepper, oregano
bake for 45min at 415°
Brussel sprouts:
clean and cut tips in a T shape for faster cooking
spread in a pan (one layer thick), mix in olive oil, garlic powder, and salt.
bake at 400° for ~30min or until sufficiently soft
Baked Potatoes
wash and poke holes in potatoes with fork
bake whole potatoes at 400° for 40 min
OR wash and place in instapot for 30 min with a little water
Black beans
recipe
I cooked it in instapot for 33 min on bean/chili mode

Baking:
Simple Bread [2900 cal, ~2 loaves]
mix:
2.25 cup warm water
3 tbsp sugar
2 tbsp canola oil
1 tbsp yeast (0.45oz)
1 tbsp salt
~6.5 cup flour
knead, sit ~90 min (in warm area ideally)
knead, sit in pan ~40 min
bake at 375° 30-35 min
prepare garlic butter, mix on stove:
2 cloves minced garlic
1/2 cup butter
mix (in bowl):
0.5 cup warm water
1 tsp sugar
1tbsp yeast (0.45 oz)
1 tsp salt
1 tbsp of garlic butter
1/4 cup plain yogurt
2 cup bread flour
let dough sit 2 hours

alternative recipe to try next time
Pizza Dough [2 medium pizza crusts ~2900 calories (+toppings)]
mix in a bowl, and (optionally) let sit for ~10 min
1.5 cup warm water
1.5 tbsp yeast
1 tbsp sugar
add to bowl and mix/knead into a ball:
0.5 tbsp salt
4 tbsp olive oil
4 2/3 cup flour
garlic powder / basil as desired
final preparation of dough:
add extra flour or water while kneading if dough is too wet or dry
when dough is in a nice kneaded ball, cut in half and use each portion for a pizza (roll out into a crust shape)
(you can also store extra dough in the fridge for 1-3 days, or in the freezer for up to 2 weeks.)
bake at 425° 13-15 min)
let sit ~20 min
Sourdough bread:
Baking (Desserts):
mix:
2-3 very ripe, mashed, bananas
1.5 cup flour
~3/4 cup sugar (1/2 cup for less sweet, 1 cup for extra sweet)
1/3 cup of butter (salted or unsalted) measure, then melt
1 large egg
1 tsp baking soda
pinch of salt
1 tsp vanilla extract
bake at 350° 50-60 min
Pie Crust [2 crusts or a complete double pie crust]
Tips: Finely chop the butter and mix with everything except the flour in the nutribullet, then combine with the flour.
Even better would be to mix half of the mix at a time (because nutribullet is not ideal for this)
Also I found that the dough ball was too hard after sitting in the fridge for an hour, I had to let it sit out afterwards before working it. But it’s a good recipe.
I followed the recipe above (doubled for two pies) but baked it according to this recipe and added the spices (ginger, cinnamon, nutmeg) from that recipe as well.
BUT the first pie I baked was very soupy after cutting, so the second one I left in the over for like an additional 40 minutes and then there were no issues. (But also I may have not added enough flour when following the recipe).
I used 6.5 pounds of apples between the two pies and still had almost 2 pounds of apples left.
Also I should have chopped the apples much finer (the smaller the better), mine were not soft enough after baking.
mix:
7.5 oz pumpkin puree
1 cup flour
1 cup sugar (I tried 0.8 and it wasn’t super sweet)
3/4 stick unsalted butter, softened/mashed
1 large egg
1/4 tsp salt
3/4 tsp baking soda (I increased this because I’m not suring baking powder)
1/2 tsp ground cloves
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
bake at 350° ~55 min
Drinks:
Apple cider rum punch
